Just over, 10 years ago, I fell into the world of 'fine' chocolate

Although by accident, discovering how little we know and how complex the chocolate world is, this has become my main passion in life.  Along side this and linking with my previous vocation, SUSTAINABILITY and ETHICS is of key importance, which when in place, adds to the quality of the finest chocolate in the world.  

I am very proud to be part of this amazing chocolate family, working together and trying to make positive change to the industry. Constantly developing my knowledge and experience I love nothing more than to share all of this with you.

Together we can really make a difference to the lives of Cocoa Farmers, the ecology of the land it comes from and the quality of the products we eat.

The Chocolate



I only use the most ethical and sustainable chocolate.  This is not about labels and certifications, but, more importantly, knowing the makers, understanding the process and tasting the quality.

As well as the small craft makers there are also other good larger companies who's coverture is of fine flavour and practice a more sustainable approach, yet most catering establishments use generic mass produced products.  

My aim to to create a campaign to get more chefs, restaurants and food outlets to use 'better' and more 'sustainable' chocolate products.
